Cantonovo – Puglia Organic Primitivo Wine
Cantonovo is the most authentic expression of the hills of the Murgia of Bari, hanging in the balance between the Adriatic and the Ionian Sea. From the respect of nature, typical for an organic wine, to the vinous aromas typical of a mellow red. The freshness of the red fruits seduces at the first sip. The name celebrates the cycle of nature, evoked by the four seasons that name the chapters of “Canto Novo,” written by Gabriele D’Annunzio.

Vineyards location: contrada Marchione, on the Turi-Castellana Grotte street, Puglia.
Soil characteristics: chalky and clayey in the karst area of Murgia dei Trulli
Training system: espalier
Yields per plant: 1 to 4 kg
Planting year: replanted in 1990, where there already was a vineyard since the early 1900’s.
Harvest: in the first half of September, the grapes are put in cases after a careful grapes bunch selection
Vinification: with an innovative technique involving carbonic maceration for about 10 days. At the end of this phase, the grapes are pressed and any residual sugar is transformed into alcohol with the conventional method at controlled temperature
Annual production: about 30,000 bottles
Serving temperature: 18 – 20 °C
TASTING NOTES
Color: bright and mellow purplish red
Nose: vinous, quite intense and persistent, attractive its wide range of red fruits, fully expressed with their freshness
Palate: pleasantly soft at the palate, soothing tannins, its acidity brings the right freshness. Confirmed the lush red fruits in the mouth
Food pairing: delicious when paired with red meats, cheeses, legume soups, fava beans and chicory, orecchiette pasta and turnips
Cellaring: up to 10 years, if properly stored
